Ingredients

  • Muffin Mix

  • 1 cup of Kodiak protein waffle mix

  • 3 tablespoon lemon zest

  • 1⁄2 lemon juice

  • 1 tablespoon sugar

  • 3 scoops protein powder

  • 1⁄2 cup milk

  • 1 cup non-fat Greek yogurt (try

  • vanilla for more flavor!)

  • Cream cheese center

  • 2.5 tbsp 1⁄3 less fat cream cheese

  • 1 tablespoon powdered sugar

  • 1-2 tablespoons lemon

Preparation

  1. In a medium to large bowl mix together all of the ingredients.

  2. Separate into 6 equal parts in a muffin or cupcake tin.

  3. In a small bowl mix cream cheese and powdered sugar until smooth. Use 1 tbsp to portion out and place in the middle of the batter of each muffin.

  4. Sprinkle a pinch of sugar on each muffin.

  5. Back at 350° for 12 minutes or until batter is cooked completely.
