Lemon Cream Cheese Protein Muffins
1 cup of Kodiak protein waffle mix
3 tablespoon lemon zest
1⁄2 lemon juice
1 tablespoon sugar
3 scoops protein powder
1⁄2 cup milk
1 cup non-fat Greek yogurt (try
vanilla for more flavor!)
Cream cheese center
2.5 tbsp 1⁄3 less fat cream cheese
1 tablespoon powdered sugar
1-2 tablespoons lemon
In a medium to large bowl mix together all of the ingredients.
Separate into 6 equal parts in a muffin or cupcake tin.
In a small bowl mix cream cheese and powdered sugar until smooth. Use 1 tbsp to portion out and place in the middle of the batter of each muffin.
Sprinkle a pinch of sugar on each muffin.
Back at 350° for 12 minutes or until batter is cooked completely.
